Tasty Tuesday... Mom's Apple Sour Cream Coffee Cake

I used to be so good at participating in link ups and then I feel like all of the link ups I used to participate in kind of sort of died.  Well Tuesdays used to be recipe days, so rather than finding a recipe link up, I am just going to institute "Tasty Tuesdays" on my blog.  Every time I post on a Tuesday that post is going to be dedicated to some sort of recipe... whether drink, dinner, dessert, breakfast, etc... Tuesdays are going to be dedicated to recipes.

To kick it off I am going to start with my mom's famous Apple Sour Cream Coffee Cake!  This recipe is always a fan favorite at church and we definitely enjoyed it the last time I made it for us at home!



Mom's Apple Sour Cream Coffee Cake

Ingredients:
1/2 c. finely chopped walnuts
sugar
1 tsp. cinnamon
1/2 c. butter
2 c. All-Purpose flour
1 c. sour cream
2 eggs
1 tsp. baking powder
1 tsp. baking soda
1 tsp. vanilla
1 medium cooking apple, peeled and thinly sliced



Directions:
1. Preheat oven to 350.  Grease a 9" tube pan.

2. In a small bowl combine nuts, 1/2 c. sugar and cinnamon.  Set aside.

 


3. In a large bowl, with mixer at medium speed, beat 1 c. sugar with butter until light and fluffy.

4.  Add remaining ingredients and beat at a low speed until blended, constantly scraping the bowl.



5. At medium speed beat mixture for 3 minutes, scraping occasionally.



6. Spread half of the batter into pan; top with 1/3 nut mixture, then with apples, then with 1/3 nut mixture.




7. Spread with remaining batter and nut mixture.



8. Bake 65-70 minutes.


9. Cool completely in pan on wire rack.



10. Enjoy!

A Different Take on a Classic Recipe... Cheesy Stuffed Meatloaf

Growing up as a kid I was never a huge fan of meatloaf.  I always thought it tasted funny and I needed more mashed potatoes than you could ever imagine to just cover up the taste of it.  Fast forward to adulthood and I still don't like meatloaf all that much, but one day my mom decided to make a cheese stuffed meatloaf for us and it was then that I decided that meatloaf wasn't that bad.  One of the things that I LOVE about this recipe is that it is one of those that has a bunch of suggested ingredients, but is one where you can basically throw whatever you want in the mix to make it your own.

So without further ado... here is a delicious recipe for cheese stuffed meatloaf!!



Cheesey Stuffed Meatloaf

Ingredients:
Ground Beef
Bread Crumbs
Garlic Powder
Seasoned Salt
Seasoned Pepper
Parsley
Worcestershire Sauce (I only used 2 shakes because I am not a huge fan of the taste of this, but need it for the consistency)
1 Egg
Sliced Cheese (I used Sharp Cheddar and Colby Jack... pre-sliced from the grocery store of course)
*Anything else you want to add*
I added:
     Parmesean Cheese
     Paprika
     Red Pepper Flakes




Directions:
1. Preheat oven to 350.
2. Grease meatloaf pan.
3. Add all ingredients to mixing bowl.  *Note: there are no amounts to any of the ingredients because it is basically all done to taste. You can add as little or as much as you want to the meat*


4. Mix together.


5. Add half of the meat mixture to the pan.


6. Spread slices of cheese evenly over the meat.


7. Top with remaining meat.


8. Bake at preheated oven for 45-60 minutes (since getting a new meatloaf pan we have only been baking it for 45 minutes, but prior to the new pan we cooked it for closer to an hour)
9. Enjoy!

Delicious Dish Tuesday... Nan's Icebox Cookies

I know that Christmas is over, but before the holiday season has completely passed us by I wanted to share with you my great-grandma's Icebox cookie recipe.  This has been one of my favorite Christmas cookies ever since I was a little girl and I am so thrilled to have the ability to continue my Nan's legacy in making this cookie.  One of the funny things about making my Nan's cookies is that although we all have the same recipe, for some reason depending on who makes the cookies they all have a slightly different taste to them.  No matter what they taste delicious, it is just kind of amusing how they all always seem to taste differently.


Nan's Icebox Cookies

Ingredients:
1 1/2 c. sifted flour
1/2 tsp. soda
1/2 tsp. salt
1/2 c. butter
1/2 c. granulated sugar
1/2 c. packed light brown sugar
1 egg
1 tsp. vanilla
1/2 c. chopped walnuts


Directions:
1. Preheat oven to 375.
2. Sift flour, soda and salt.  Set aside.




3. Cream butter.
4. Add sugars, egg and vanilla to butter.



5. Gradually add flour mixture and nuts.



6. Turn dough onto large piece of wax paper and shape into bar 2" in diameter.



7.  Put in freezer until hard (I usually put it in the freezer overnight)
8. Slice into 1/8" thick pieces and place on cookie sheet.


9. Sprinkle with granulated sugar.


10.  Bake for 10 minutes or until golden brown (in our oven it takes about 8 minutes)
11. Enjoy!!

Delicious Dish Tuesday... Peppermint Bark

Before the Holiday Season comes to an end I wanted to share with you my (fairly) quick and easy recipe for Peppermint Bark.  I fell in love with peppermint bark years ago after trying some from Williams Sonoma and was determined to figure out how to create my own.  While I don't think mine is as good as the stuff I can get at Williams Sonoma (I swear they put something extra in there to make it so delicious and so addicting) but I think it is still pretty darn good!!


Peppermint Bark

Ingredients:
1, 12 oz bag semi-sweet chocolate chips
1, 12 oz bag white chocolate chips
1 tsp. peppermint extract
8 candy canes, crushed


Directions:
1. Preheat oven to 250.
2. Line a 9"x13" pan with foil, letting it hang over the sides


3. Spray foil with non-stick cooking spray.
4. Pour the semi-sweet chocolate chips in an even layer over the foil.


5. Place in oven from 5 minutes until almost melted.


6. Remove from oven and smooth with knife.



7. Place in fridge until cold/firm (about 20-25 minutes)
8. Melt white chocolate chips in a double boiler until chocolate is almost melted.



9. Remove from heat and stir in peppermint extract.


10. Let cool a bit and spread over chocolate layer.


11. Sprinkle with crushed candy.




12. Chill until both layers are firm and you can break into bite-sized pieces.


13. Enjoy!
