Tasty Tuesday... Mom's Apple Sour Cream Coffee Cake

I used to be so good at participating in link ups and then I feel like all of the link ups I used to participate in kind of sort of died.  Well Tuesdays used to be recipe days, so rather than finding a recipe link up, I am just going to institute "Tasty Tuesdays" on my blog.  Every time I post on a Tuesday that post is going to be dedicated to some sort of recipe... whether drink, dinner, dessert, breakfast, etc... Tuesdays are going to be dedicated to recipes.

To kick it off I am going to start with my mom's famous Apple Sour Cream Coffee Cake!  This recipe is always a fan favorite at church and we definitely enjoyed it the last time I made it for us at home!



Mom's Apple Sour Cream Coffee Cake

Ingredients:
1/2 c. finely chopped walnuts
sugar
1 tsp. cinnamon
1/2 c. butter
2 c. All-Purpose flour
1 c. sour cream
2 eggs
1 tsp. baking powder
1 tsp. baking soda
1 tsp. vanilla
1 medium cooking apple, peeled and thinly sliced



Directions:
1. Preheat oven to 350.  Grease a 9" tube pan.

2. In a small bowl combine nuts, 1/2 c. sugar and cinnamon.  Set aside.

 


3. In a large bowl, with mixer at medium speed, beat 1 c. sugar with butter until light and fluffy.

4.  Add remaining ingredients and beat at a low speed until blended, constantly scraping the bowl.



5. At medium speed beat mixture for 3 minutes, scraping occasionally.



6. Spread half of the batter into pan; top with 1/3 nut mixture, then with apples, then with 1/3 nut mixture.




7. Spread with remaining batter and nut mixture.



8. Bake 65-70 minutes.


9. Cool completely in pan on wire rack.



10. Enjoy!

#SayIDotoSantoleri... SS & MS Tie the Knot

Besides working like a crazy person the past 6 months I also had the pleasure of being a bridesmaid in one of my best friend's weddings!! When SS asked me to be a bridesmaid I was over the moon as although I haven't known SS for all that long she is definitely one of those girls who I know is going to be my lifelong friend.  We met approximately five years ago when KT brought SS along to a birthday celebration and in that short amount of time SS became one of the best friends a girl could ever ask for.

In August we hosted a bridal shower for SS at the Corinthian Yacht Club.  We couldn't have asked for a more beautiful venue for the shower.  Everything turned out fantastic (if I do say so myself) and a lovely time was had by all.








And the end of August we headed to OCMD (Ocean City, Maryland for those of you who aren't from this area) for Sam's bachelorette weekend.  A fun time was had by all... and we all ended up with some fun "tattoos" as well as stories from the weekend.













When the big day, September 12, 2015 rolled around, we were all super excited to help SS get ready to marry the love of her life.  We got ready at MS's grandparent's house and let me say that house was like a time capsule and I could have spent hours just walking around looking at everything.  We primped and prepped for most of the morning, but obviously took a break to have some mimosas.





We arrived at the church fairly on time and the ceremony was absolutely beautiful.  I was so nervous because it was my first time participating in a Catholic wedding ceremony and not being Catholic I was super afraid I was going to mess something up.  Fortunately everything went perfectly and once the ceremony was over we were all ready to get our party on.





The reception was at the Merion Tribute House and what a GORGEOUS reception venue it was.  I am a sucker for old, historic buildings so this place was right up my alley.  SS and MS did a FABULOUS job with the reception and a fun time was had by all.
















I was so sad to see the night end as it was a fabulous time with some of my most favorite people.  I can't remember the last time I danced that much, laughed that much and had overall such an amazing time with some of the best friends a girl could ever ask for.

It was so special to be a part of such a special day for SS and MS and I wish them nothing but years and years of happiness together!
