A Old Favorite... Spinach Lasagna

It has been a LONGGGGG time since I have posted a recipe on this blog of mine, so I figured if I was going to post one I should pick one of our favorites to share with you.  When M and I first started dating I had basically just stopped being a vegetarian, but still didn't really like meat all that much.  Being the wonderful boyfriend he was, he went online and found a recipe for spinach lasagna that we have modified over the years to make uniquely our own.



Spinach Lasagna

Ingredients:
1 lb. ricotta cheese
4 c. grated mozzarella cheese
1 egg
1 package fresh spinach
1 tsp. salt
3/4 tsp. oregano
1/8 tsp. pepper
1 jar spaghetti sauce (we make our own homemade sauce instead of using a jar)
8 oz. lasagna noodles, uncooked
1 c. water


Directions:
1. Preheat oven to 350.
2. In large bowl mix ricotta cheese, 2 c. mozzarella cheese, egg, spinach, salt, oregano and pepper.



3. In a greased 9 x 13" baking pan, layer 1/2 of spaghetti sauce, 1/3 of noodles, and 1/2 of cheese mixture

 

4. Repeat.
5. Top with remaining noodles
6. Sprinkle with remaining mozzarella cheese

7. Pour water around edges of baking dish
8. Cover tightly with foil.  Bake for 1 hr. 15 minutes or until bubbly
9. Let stand 15 minutes before serving.
10. Enjoy!

  1. We love lasagna, esp because we can freeze the other half for another meal. I have never tried spinach in it, I may just need to.

  2. I'm not really a fan of Lasagna b/c of my acid reflux but this is a good turn around on this and I've always wanted to learn how to make home made lasagna. Maybe one day I will. See I didn't pass over your blog today girl.
